Easter Menu Ideas

Easter is the perfect time to indulge in some delicious dishes, and one of the most traditional Easter meals is roast rack of lamb. Whether you opt for a classic roast leg of lamb or rack of lamb or take a more creative approach with our herbed lamb kebabs or a quick and easy lamb burger, there are plenty of delicious recipes to choose from that are sure to please everyone at your Easter gathering. So, if you’re looking for some inspiring Easter menu ideas featuring lamb, read on for some of our favorite recipes.
Rack of Lamb
Prep time 15 minutes (+ overnight marinating) cooking time 50-55 minutes

Ingredients
- 2 racks of lamb, trimmed
- 2 tablespoons olive oil
- Sea salt, to taste
- Freshly ground black pepper, to taste
- 2 cloves garlic, minced
- 2 tablespoons fresh thyme leaves
- 2 tablespoons fresh rosemary leaves, chopped
- 2 tablespoons Dijon mustard
DIRECTIONS:

- Preheat oven to 200 degrees C
- Place the racks of lamb onto a baking sheet and season both sides with sea salt and freshly ground black pepper.
- In a small bowl, mix together the olive oil, garlic, thyme, rosemary, and Dijon mustard. Rub the mixture all over the lamb racks.
- Place the lamb racks on the prepared baking sheet and bake for 20-25 minutes or until the internal temperature reaches 63 degrees C
- Remove the lamb racks from the oven and let rest for 10 minutes before serving. Enjoy!
Lamb Kebab Skewers
Prep time 15 minutes (+ overnight marinating) cooking time 20 minutes

Ingredients
- 2 pounds of leg of lamb, cubed
- 2 tablespoons olive oil
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- Salt and pepper
- 4 cloves garlic, minced
- 2 tablespoons freshly chopped mint
- 2 tablespoons freshly chopped rosemary
- 2 red onions, cut into wedges
- 2 green peppers, cut into strips
DIRECTIONS
- Preheat your grill or oven to 180°C.
- In a bowl, combine the olive oil, coriander, cumin, salt, pepper, garlic, mint, and rosemary. Mix well.
- Add the cubed lamb to the bowl and mix until it is completely coated in the marinade.
- Place the cubes of lamb on metal skewers.
- Alternate with the red onion wedges and green pepper strips on the skewers.
- Grill the kebabs for 15-20 minutes, flipping occasionally.
- Serve the kebabs with your favorite sides. Enjoy!
Lamb Burgers
Prep time 25 minutes – Cooking time 25 minutes

Ingredients
- 1 lb. ground lamb
- 2 cloves garlic, minced
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground black pepper
- 1/2 teaspoon sea salt
- 4 pita bread rounds
- 1 cup tzatziki sauce
- 1 cup chopped tomatoes
- 1 cup grated cucumber
- 1 cup crumbled feta cheese
- 1/4 cup chopped olives
DIRECTIONS
- In a large bowl, combine the ground lamb, garlic, red onion, parsley, cumin, garlic powder, onion powder, pepper, and salt. Mix until well combined.
- Form the mixture into 4 patties of equal size.
- Place the patties onto a hot grill. Cook for about 5 minutes per side or until the desired doneness is reached.
- To assemble the burgers, place a patty onto each of the pita bread rounds. Top with tzatziki sauce, tomatoes, cucumber, feta cheese, and olives.
- Serve warm. Enjoy!
Irish Lamb Stew
Prep time 15 minutes – Cooking time 2 hours

Ingredients
- 2 pounds leg of lamb, cubed
- 2 tablespoons of olive oil
- 1 large onion, diced
- 2 large carrots, peeled and thickly sliced
- 2 stalks of celery, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- ½ teaspoon dried rosemary
- 2 tablespoons tomato paste
- 2 cups beef broth
- 2 cups Guinness or other stout beer
- 1½ pounds potatoes peeled and cubed
- 2 tablespoons butter
- Salt and ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
DIRECTIONS
1. Heat the olive oil in a large pot over medium-high heat. Add the lamb, onion, carrots, celery, and garlic; cook, stirring occasionally, until the lamb is browned and the vegetables are softened about 8 minutes.
2. Stir in the thyme, rosemary, and tomato paste; cook for 1 minute. Pour in the beef broth and beer and bring to a boil. Reduce the heat to low and simmer for 25 minutes.
3. Add the potatoes, butter, salt, and pepper. Simmer, stirring occasionally, until the potatoes are tender, about 20 minutes.
4. Sprinkle with parsley before serving. Enjoy!
