 – 2 kg chicken wings 

 – 1 cup plain yogurt 

 – 4 cloves garlic, minced 

 – 2 tbsp lemon juice 

 – 1 tsp ground cumin

 – Salt and pepper to taste 

 – 1 cup all-purpose flour

 For the Toum (Garlic Sauce): 

 – 1 head of garlic, peeled 

 – 1 cup vegetable oil 

 – 2 tbsp lemon juice

 – 2 large tomatoes, diced 

 – 1 cucumber, diced 

 – 1 red onion, thinly sliced 

 – 200g feta cheese, crumbled 

 – 1/4 cup kalamata olives 

 – 2 tbsp olive oil 

 – 1 tbsp red wine vinegar 

 – 1 tsp dried oregano

 Ingredients for Skordalia: 

 – 500g potatoes, peeled and boiled 

 – 4 cloves of garlic, minced

  1. Preheat the oven to 160°C. 
  2. Season the pork shoulder with salt and pepper. 
  3. In a large ovenproof pot, heat the olive oil over medium-high heat. 
  4. Brown the pork shoulder on all sides, then remove from the pot and set aside. 
  5. In the same pot, sauté the onion and garlic until softened. 
  6. Add the chicken broth, red wine, bay leaves, and dried oregano. Bring to a simmer. 
  7. Return the pork shoulder to the pot. Cover and place in the preheated oven. 
  8. Braise the pork for 2.5 to 3 hours, or until tender and falling off the bone. 
  9. In the meantime, prepare the Horiatiki Salad by combining all the salad ingredients in a bowl. Toss well and refrigerate until serving. 
  10. For the Skordalia, mash the boiled potatoes in a bowl until smooth. Add the garlic, olive oil, and white wine vinegar. Mix well and season with salt. 
  11. Once the pork is done, remove from the oven and shred the meat using two forks.
