Turkey Mince & Vegetable Stir-Fry

Ingredients:

– 500g lean turkey mince
– 1 onion, diced
– 2 cloves garlic, minced
– 2 carrots, diced
– 1 red capsicum, sliced
– 1/2 cup frozen peas
– 1/4 cup soy sauce
– 1 tablespoon sesame oil
– Fresh herbs such as parsley, to garnish (optional)

Method:

1. Heat a large non-stick frypan over medium-high heat. Add the mince and cook, stirring occasionally, for 5 minutes or until lightly browned.

2. Add the onion, garlic and carrot to the mince and cook, stirring occasionally, for a further 3-4 minutes or until the vegetables are softened.

3. Add the red capsicum, peas and soy sauce and stir to combine. Cook, stirring occasionally, for 5 minutes or until the vegetables are tender.

4. Stir in the sesame oil and season with salt and pepper, to taste.

5. Serve the stir-fry hot and garnished with fresh herbs, if desired. Enjoy!

 

Turkey Mince Stuffed Peppers

Ingredients:

– 500g lean turkey mince

– 5 bell peppers cut in half

– 1 onion finely diced

– 1 red capsicum finely diced

– 2 cloves garlic, minced

– 2 tablespoons Worcestershire sauce

– 1 teaspoon paprika

– 1 teaspoon dried oregano

– 1 teaspoon ground cumin

– 1 cup cooked brown rice

– Irish Sea Salt and pepper to taste

– 2 tablespoons olive oil

Method:

1. Preheat oven to 375F (190C).

2. Heat olive oil in a large skillet over medium heat. Add onion, capsicum and garlic and cook, stirring occasionally, until onion is soft and golden, about 4 minutes.

3. Add turkey mince and cook, stirring often, until mince is browned and cooked through, about 10 minutes.

4. Add Worcestershire sauce, paprika, oregano, cumin, cooked brown rice, salt and pepper and mix to combine. Remove from heat.

5. Place pepper halves on a baking sheet lined with parchment paper. Use a spoon to fill each pepper half with turkey mince mixture.

6. Bake in preheated oven for 20 minutes or until peppers are tender.

7. Serve hot. Enjoy!

 

 

 

Coconut Curry Chicken

Ingredients:

– 2 pounds diced chicken
– 1 tablespoon olive oil
– 1 red onion, chopped
– 2 cloves garlic, minced
– 1 teaspoon curry powder
– 1 (14.5 ounce) can coconut milk
– 1 cup chicken broth
– 1 teaspoon paprika
– ½ teaspoon turmeric
– Irish Sea Salt and pepper to taste

Method:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the diced chicken and cook for 5 to 7 minutes, stirring occasionally, until chicken is cooked through.

3. Reduce the heat to medium and add the chopped onion and garlic. Cook for an additional 3 minutes.

4. Add the curry powder, coconut milk, chicken broth, paprika and turmeric. Stir until everything is combined.

5. Bring the mixture to a simmer and reduce the heat to low. Simmer for 10 minutes.

6. Season with salt and pepper to taste. Serve hot.

 

Baked Herb Crusted Chicken

Ingredients:

– 2 large chicken breasts, butterflied into 4 fillets
– 2 tablespoons olive oil
– 2 tablespoons lemon juice
– 1 teaspoon ground black pepper
– 1 teaspoon garlic powder
– 2 teaspoons dried basil
– 2 teaspoons dried oregano
– 1/2 teaspoon Irish sea salt

Method:

1. Preheat the oven to 350°F (175°C).

2. Place the chicken fillets in a baking dish.

3. Drizzle with olive oil and lemon juice.

4. In a small bowl, mix together the pepper, garlic powder, basil, oregano, and sea salt.

5. Sprinkle the herb mixture over the chicken fillets.

6. Bake for 20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

7. Serve warm with your favorite side dish. Enjoy!

 

 

Baked Beef and Broccoli

Ingredients:

– 1.1 lb.(500g) lean beef, cut into thin strips
– 2 heads of broccoli, florets only
– 2 cloves garlic, minced
– 2 tablespoons olive oil
– 1/4 cup reduced sodium soy sauce
– 2 tablespoons honey
– 1/4 teaspoon ground ginger
– Irish Sea Salt and pepper to taste

Method:

1. Preheat oven to 180 degrees C.
2. Place beef in a large bowl and season with Irish sea salt and pepper to taste.
3. In a separate bowl, whisk together garlic, olive oil, soy sauce, honey, ginger, salt and pepper.
4. Pour soy sauce mixture over the beef and stir to combine.
5. Place beef strips in a single layer on a large baking sheet.
6. Add the broccoli florets to the baking sheet and toss to combine.
7. Bake in preheated oven for 20 minutes, stirring once halfway through.
8. Serve and enjoy.

 

Korean Style Beef

Ingredients:

– 1.1 lb (500g) Bavette steak, thinly sliced
– 2 cloves garlic, minced
– 2 tablespoons soy sauce
– 2 tablespoons sesame oil
– 1 tablespoon honey
– 1 tablespoon brown sugar
– 1/2 teaspoon ground ginger
– 1 teaspoon Sriracha sauce
– 2 tablespoons vegetable oil
– Chopped green onion, for garnish

Method:

1. In a medium bowl, whisk together garlic, soy sauce, sesame oil, honey, brown sugar, ground ginger and Sriracha.
2. Add the steak to the marinade in the bowl and mix until all of the steak is evenly coated. Cover and refrigerate for at least 1 hour.
3. Heat vegetable oil in a large skillet over medium-high heat. Add the steak and all of the marinade to the skillet. Cook for 5 to 7 minutes, stirring frequently, or until steak is cooked through.
4. Serve the Korean style beef over steamed rice. Garnish with chopped green onion. Enjoy!
